I had rotisserie chicken and a slightly-outdated-but-still-good bagged chopped salad. A leg and a wing was more than enough meat; I'm contemplating boiling the skin and bones when done with it to make stock. Can always mix that with rice, canned vegetables and other chicken bits. Of course, I saved the breast- that'll make a nice Chicken Diablo later tonight.
Low funds for a long time relates to developing habits & life skills that stick with you forever. Peeling tomatoes is super easy, making your own bread, tortillas, & pastas. Dried beans and old ugly veggies to make soups. Creating actual menus that really taste & look good for very little money. i.e. Fried rice can be a life saver. Lots of Mexican, Middle Eastern, & Asian foods are super cheap too, and you can make a lot for just a few bucks. Learn how to do it, and you can always 'dine' well, for cheap. Even when you're 'up'.
I lazed out and made a frozen pizza. Need to clear out some room in the freezer for breads, and trying to make small parcels to share with friends and neighbors. I saw the writing on the wall and ordered some stuff, so I've got enough hand soap to share with each of our seniors at the center (we're closing it except for delivery and pickup), as well as a roll of TP, 4 pack of AAs, and an LED desk lamp.

Finished stripping the little meat left on the chicken and made a ciabatta roll sammich with both white and dark meat, some hot sauce, Monterey Jack, and avacado. Also spiced up a can of western style beans with some jalapenos, and a dash of Cajun seasoning. Decent lunch for about $2.
