In terms of "big" as in I assume lots of people have heard of them then 1&1, ukfast, uk2, etc all spring to mind as well. But, they're also not providers I would choose to use myself.

I've always found the proxmox interface reports higher RAM usage than the VPS reports.

As above, check the client isn't still sending from the old config. Their email client sounds like it has incorrect SMTP details. You could get them to email you from webmail and their client, and comapre headers?
