Are the Asrock Rack and similar 24/7-focused boards already available or are you using desktop mainboards?
Currently, AsrockRack (B650D4U-2T/BCM) and Gigabyte (MC13-LE0) are available for the 7000 series, and some supermicro boards might be coming in too, I recall seeing a AM5 based Microcloud coming soon somewhere as well. We're using the Gigabyte one as it's more easily available in Europe currently compared to the AsrockRack.

I suspect it could be due to the B650 / B650E which the AM5 motherboards are using so far instead of a X670, the B650/E has much fewer PCIe Lanes and certain ports from what I remember (similar to the B450 v X470 etc), but then again the X570 from AsRockRack too didn't have 2 full length M.2 slots, 1x full "22110" and the other one being a bit shorter.
I'd love to see a AM5 board with two full size M.2 slots
I considered building a few Ryzen systems but the limitations in terms of storage and RAM makes it hard to justify.

Should be possible with 48GB UDimms beeing around by now. (But without 'actual' ECC so far, no idea if that's possible.)

AsRockRack and Gigabyte make server boards for Ryzen 7000, I've seen a handful of providers get them and sell them already
To be honest, desktop boards are probably fine too given AsRockRack's track record, they only really lack IPMI.

Non ECC is no an option for a production server
With EPYC systems I can use 512GB without a problem, which makes it much more appealing imo
