I barely use my phone to edit text, but when I do, I use QuickEdit Text Editor Pro. There are free and paid versions, non-Pro and Pro respectively. It works great so far.

I don't even like typing a normal text / chat message on my phone.
I can not imagine doing any meaningful text/code editing via mobile. Would drive me absolutely insane.

Notes app and Termius to copy-paste text is the way to go for me.

We take notes in Google Calendar.
The content synchronizes across our devices, without requiring a separate app.
The entries that contain notes are moved to a future date every week or month.
During the move, we delete outdated information from the entry.
